Tart, moist and delicious gooseberry bundt cake!

  • 200 g butter
  • 2 dl sugar
  • 3 eggs
  • 2.5 dl potato flour
  • 1 dl wheat flour
  • 2 tsp baking powder
  • 1 tbsp vanilla sugar
  • ~ 200 g of red gooseberries
  • (icing sugar)


  1. Preheat the oven to 175 C.
  2. Whisk butter and sugar together in a big bowl. Add eggs one at a time, whisking continuously.
  3. Add all the dry ingredients: potato flour, wheat flour, baking powder and vanilla sugar. Mix together.
  4. Pour the mixture in a greased bundt cake pan. Add the gooseberries on top (press some of them lightly so you get gooseberries in the middle of cake as well).
  5. Bake in the oven for about 45 minutes. Finish the cake with icing sugar. Enjoy!
