Tart, moist and delicious gooseberry bundt cake!

Ingredients
- 200 g butter
- 2 dl sugar
- 3 eggs
- 2.5 dl potato flour
- 1 dl wheat flour
- 2 tsp baking powder
- 1 tbsp vanilla sugar
- ~ 200 g of red gooseberries
- (icing sugar)
Instructions
- Preheat the oven to 175 C.
- Whisk butter and sugar together in a big bowl. Add eggs one at a time, whisking continuously.
- Add all the dry ingredients: potato flour, wheat flour, baking powder and vanilla sugar. Mix together.
- Pour the mixture in a greased bundt cake pan. Add the gooseberries on top (press some of them lightly so you get gooseberries in the middle of cake as well).
- Bake in the oven for about 45 minutes. Finish the cake with icing sugar. Enjoy!
