First, make sure that the glass jar you’re going to use, is thoroughly sanitised in boiling water before adding the honey. Otherwise, the honey may begin to ferment.
Make sure the spruce tips are dry. Place the spruce tips in the clean glass jar. Pour the honey over the spruce tips. (If the honey is thick and difficult to pour, warm slightly in a sauce pan to loosen).
Allow the honey to infuse for a couple weeks. Pour the honey into a clean jar and serve as regular honey. (If you don’t want to wait that long, you can still start using the honey earlier, even though it won’t be perfectly infused.)
The honey can be stored in the refrigerator for several months.
