We all know those mornings, when you run out of time and you end up skipping breakfast and sipping coffee from a takeaway cup. There’s nothing bad about that – I have breakfast-free mornings waaay too often! But especially on weekends it’s nice to have a long, slow breakfast with something delicious on the table. Though I like long brunches, I still want my breakfast easy to make. And that’s why one of my favourite brunch dishes is crumble. Apple crumble, strawberry crumble, blueberry crumble…Anything goes with crumble! It’s like having dessert for breakfast, except crumble can actually be healthy! Here’s my healthy breakfast crumble recipe!
Breakfast oat berry crumble
INGREDIENTS:
2 cups of frozen berries (raspberries, blueberries, strawberries…)
Crumble:
2.5 dl / 1 cup of oatmeal
a handful of hazelnuts (crushed a bit)
3 tbsp of coconut flakes
1 tbsp of honey
1 tbsp of unsweetened peanut butter
0.25 tsp of cinnamon
0.25 tsp of cardamom
Preheat oven to 200°C.
Mix all crumble ingredients in a bowl. Place the berries in a small ovenproof dish.
Cover the berries with the crumble and bake for around 25-30 minutes.
Enjoy! (Perfect with yoghurt!)
